Summer Chicken Sausage

If you’ve been eating hot dogs for days on end, this is a great alternative to them, without going too far out of your comfort zone.  This tasty recipe is pretty filling and will also help you to get to know some of the locals since it does taste best with some farm-fresh veggies.

Ingredients:

1-2 lbs of Chicken Sausage
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Red Onion
1/2 – 1 pt of Blueberries
1/2 of a Lime
Pure Vermont Maple Syrup
Sunflower Oil

Directions for Grill:

1. Cut peppers and onion in half and place onto grill
2. Once they are brown on the underside, flip them over and add the chicken sausage to the grill
3. Flip both the chicken and veggies regularly to make sure they are evenly cooked all the way through
4. On the side, use a grill safe bowl and squeeze out all the lime juice from one half of a lime.
5. Place bowl on grill and add the blueberries
6. After a few minutes add maple syrup to taste, into the bowl
7. Stirring occasionally, remove everything off after approximately 10 min (or when the sausage is browned and throughly cooked)
8. Slice the veggies and chicken, and mix together, drizzling a touch of Sunflower Oil on top.  (Vegetable Oil can be used as an alternative)
9. After portioned out, add the blueberries and sauce over the chicken and veggies, and enjoy

Variation for a Pan:  Follow the same directions, instead pre slice all veggies in Step 1.  Disregarding steps 8 and 9, the blueberry mixture and a bit of Sunflower Oil can be added to the pan in Step 1 as well.

Possible Side:  If you find yourself saying that you must have a side, some grilled summer corn with a little bit of salt and pepper sprinkled on top complements the dish well.
